Cooking for the freezer

With Abby's arrival just around the corner, I'm starting to cook freezer meals to help us through the first days of new parenthood.  Thought I'd share a particularly yummy muffin recipe that I tried out over the weekend.  These muffins are sitting pretty in our freezer now- ready for early morning breakfasts in the company of our new baby girl. :)  I added a sprinkling of unsweetened coconut to the tops of the muffins.  :)

KEY LIME MUFFINS (makes a dozen)


Ingredients

    • 2 cups all-purpose flour
    • 1 cup sugar
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1/3 cup milk
    • 2 large eggs, lightly beaten
    • 1/4 cup vegetable oil
    • 1 teaspoon grated lime rind
    • 1/4-1/2 cup key lime juice ( don't substitute)

Directions

  1. Add the first 4 ingredients to a mixing bowl; stir to combine.
  2. Make a well in the center of the mixture.
  3. In another mixing bowl, combine the milk and remaining ingredients.
  4. Add liquid ingredients to dry ingredients; stir until just moistened.
  5. Spoon batter into lightly greased muffin cups; fill 3/4s full.
  6. Bake at 400° for 18 minutes or until lightly browned.
  7. Turn muffins out of pan immediately.
